Lemme start off by saying thanks for blogging, it seems good Shaman blogs are few and far between.
As far as leveling a pally goes, I'd actually suggest going holy, at least for the first couple of levels in Outland. Surviving HFP as an undergeared melee class is very painful, and with the number of plate quest rewards out there with +spell damage on them holy will give you you a nice combination of survivability and damage output. Plus you'll be useful in a party as something other than mediocre dps.

Actually going Holy now isn't quite as painful as it was when +healing gear did not equal any +dmg. When BC was released the grind for Paladins was a rather painful one unless you were set up with a Ret set.
Now with the gobs of +healing gear you can have a decent level of +healing to keep on a trucking and adequate spell dmg to take down bad guys. Yes, you'd be healing instances and not tanking, but you could also be building your tank set off the instance / quest / group rewards. For the begining tankadin your defense cap and uncrushability will come from a lot of Crafted and Reputation gear anyhow once you hit 70.
